Spinach Brownies
They look like brownies, but they're not sweet! Ingredients
- 1 (9 oz.) package fresh spinach, rinsed
- 1 cup all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 2 eggs
- 1 cup milk
- 1/2 cup butter, melted
- 1 onion, chopped
- 1 (8 oz.) pkg. shredded mozzarella cheese
- 1/2 cup grated parmesan
Directions
- Preheat oven to 375 degrees F.
- Lightly grease a 9 x13 inch baking dish.
- Rinse spinach and put in a bowl.
- Microwave for 3 minutes or until cooked.
- Drain and squeeze spinach until most of the moisture is gone.
- Set aside.
- In a large bowl, mix flour, salt and baking powder.
- Stir in eggs, milk and butter.
- Mix in spinach, onion and Parmesan and mozzarella cheese.
- Transfer the mixture to the prepared baking dish.
- Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool 5 minutes before serving.
