Spinach Brownies

They look like brownies, but they're not sweet!

Ingredients

  • 1 (9 oz.) package fresh spinach, rinsed
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 eggs
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 onion, chopped
  • 1 (8 oz.) pkg. shredded mozzarella cheese
  • 1/2 cup grated parmesan

Directions

  1. Preheat oven to 375 degrees F.
  2. Lightly grease a 9 x13 inch baking dish.
  3. Rinse spinach and put in a bowl.
  4. Microwave for 3 minutes or until cooked.
  5. Drain and squeeze spinach until most of the moisture is gone.
  6. Set aside.
  7. In a large bowl, mix flour, salt and baking powder.
  8. Stir in eggs, milk and butter.
  9. Mix in spinach, onion and Parmesan and mozzarella cheese.
  10. Transfer the mixture to the prepared baking dish.
  11. Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  12. Let cool 5 minutes before serving.
