Thanksgiving is over and you may be overwhelmed with leftovers, or if you are like me, you may have been wishing for turkey leftovers. Either way, I have you covered with over ten healthy leftover turkey ideas that don’t taste like Thanksgiving.
My first choice after a heavy holiday dinner is to lighten things up a bit, and stir fry is on the list. Stir fry is so easy to throw together, all that you need to do is grab some fresh veggies from your fridge along with leftover turkey, mix up some stir fry sauce and a tasty healthy dinner is on your table in no time.
Here’s what you will need to make this turkey stir fry recipe: leftover turkey, stir fry sauce, and your choice fresh veggies such as carrots, broccoli, zucchini, bok choy, cabbage, mushrooms, really whatever you have on hand works and a cast iron fry pan or wok.
This recipe is loosely based on one of my mom’s after Thanksgiving favorites which she called turkey chow mein. It would show up for at least one meal after Thanksgiving. I call it a stir fry instead of chow mein since we serve it with rice instead of noodles.
How to Store Leftover Turkey
Before we get to the recipes, let’s talk about how to store leftover turkey…
Slice the turkey meat off of the bones and allow to cool to room temperature
Place in a storage container and store in the refrigerator for up to four days or,
Wrap tightly in freezer wrap and store for up to three months in the freezer

Leftover Turkey Stir Fry Turkey stir fry is made with fresh vegetables and turkey breast, it’s a quick an healthy dinner idea Author: anne Yield: 4 Category: dinner Method: stove top Cuisine: asian Ingredients 1 tablespoon olive or avocado oil
1 small onion sliced thin
1 clove of garlic, chopped
4 ounces of snow peas
4 ounces of fresh mushrooms, sliced
2 head baby bok choy, choppd
8 to 10 ounces of leftover turkey, cut into bite sized pieces
STIR FRY SAUCE
3 tablespoons tamari sauce
1 teaspoon sesame oil
3 tablespoons sherry, sake or broth
1/2 teaspoon ground ginger
1 tablespoon water
1 teaspoon arrowroot, cornstarch or flour Instructions Mix up the stir fry sauce – a small jar works well so that you can shake it up – set aside
Heat oil in pan over medium to high heat, add garlic and onion and cook for 2 minutes until they begin to soften
Add the vegetables and cook for 3 to 5 minutes until they become crisp tender
Stir in the turkey
Shake or mix the stir fry sauce and add to pan, stir until sauce has thickened and serve over rice Notes If you use arrowroot as a thickener, it will thicken quickly. Once liquid is thick, turn off heat and serve. Keywords: leftover turkey, turkey, stir fry Recipe Card powered by
