  • Empanadas For Your Leftover Turkey, Chicken or Duck

    It's that time of year again. Thanksgiving dinner is over and there's tons of leftover turkey or for some, duck or chicken. You are mostly likely thinking of making soup or sandwiches for the rest of the week. But you don't have to. Why not use your leftover meat to make some enticing empanadas? You will be the most popular person in your workplace, assuming you will have some leftover empanadas to share with them this week.

    Ingredients

    • 1 package, Goya Discos (puff pastry dough for turnovers)
    • 1 cup, shredded leftover turkey, chicken or duck meat
    • 1/2 cup carrots, sliced into tiny cubes
    • 1/2 cup frozen green peas
    • 1 pack (1 oz) raisins
    • 4 cloves garlic, peeled and crushed
    • 1/2 small onion chopped
    • 1 tbsp green onions, chopped
    • 1 tbsp soy sauce
    • Salt and pepper to taste
    • 1 tbsp Olive oil

    Directions

    1. Pre-heat oven to 375 degrees.
    2. In a large wok, heat Olive oil over medium-high heat.
    3. Add garlic and sauté until golden brown.
    4. Add onions and green onions and cook for 1 minute.
    5. Add carrots and cook till they become tender.
    6. Add green peas and raisins.
    7. Add shredded meat and stir-fry for 5 minutes.
    8. Add soy sauce and salt and pepper to taste. Mix well and turn off heat and allow mixture to cool down.
    9. On a flat surface, place one dough at a time.
    10. Place a heaping tablespoon of the mixture in the center. Fold dough in half and seal edges with the back of a fork or with your fingers.
    11. Repeat process for the rest of the empanadas.
    12. Place empanadas on a baking sheet and bake for 30 minutes. Serve warm with your favorite sauce or dip.
