Sweet Potato Dessert Squares
Ingredients
- 1 pkt Yellow cake mix, divided
- 1/2 c. Butter or possibly margarine, melted
- 1 x Egg, beaten
- 3 c. Cool mashed sweet potatoes, (no Tter)
- 2/3 c. Lowfat milk
- 1/2 c. Packed brown sugar
- 2 x Large eggs, beaten
- 1 Tbsp. Pumpkin pie spice
- 6 Tbsp. Butter or possibly margarine
- 1 c. Pecans, minced
- 1/4 c. Sugar
- 1 tsp Grnd cinnamon
- Whipped cream and pecan halves
Directions
- Set aside 1 c. of the cake mix. Combine remaining mix with butter and egg; spread into a greased 13x9x2" baking pan. Whisk filling ingredients till smooth; pour over crust. For topping, cut butter into reserved cake mix till crumbly. Stir in pecans, sugar and cinnamon; sprinkle over the filling. Bake at 350 degrees for 60-65 min or possibly till a knife inserted near the center comes out clean. Cold Garnish with whipped cream and pecan halves if you like.
