  • Salted Peanut Chews

    Ingredients

    • 1 1/2 c. All-purpose flour
    • 2/3 c. Firmly packed light brown sugar
    • 1/2 tsp Baking pwdr
    • 1/2 tsp Salt
    • 1/4 tsp Baking soda
    • 1/2 c. Butter or possibly margarine softened
    • 1 tsp Vanilla
    • 2 x Egg yolks
    • 3 c. Miniature marshmallows
    • 2/3 c. Corn syrup
    • 1/4 c. Butter or possibly margarine
    • 2 tsp Vanilla
    • 12 ounce Peanut butter chips
    • 2 c. Crispy rice cereal
    • 2 c. Salted peanuts

    Directions

    1. Heat oven to 350 degrees. Lightly spoon flour into measuring c.; level off. In large bowl, combine all crust ingredients except marshmallows on low speed till crumbly. Press firmly in bottom of ungreased 13x9" pan.
    2. Bake at 350 degrees for 12-15 min or possibly till light golden. Remove from oven. Immediately sprinkle with marshmallows. Return to oven for 1-2 min or possibly till marshmallows just begin to puff. Cold while preparing topping.
    3. In large saucepan, heat corn syrup, 1/4 c. margarine, 2 tsp. vanilla and peanut butter chips just till chips are melted and mix is smooth, stirring constantly. Remove from heat; stir in cereal and peanuts.
    4. Immediately spoon hot topping over marshmallows and spread to cover.
    5. Chill till hard.
