  • Pork Pineapple Hawaiian

    Ingredients

    • 1 1/2 lean pork tenderloin, cut in cubes
    • 1 tbsp. shortening
    • 1 teaspoon salt
    • 1/3 c. water
    • 1/2 c. brown sugar
    • 3 tbsp. cornstarch
    • 1/3 c. vinegar
    • 1 pound can pineapple chunks, liquid removed (reserve 1/2 c. liquid)
    • 1/4 c. soy sauce
    • 1 green pepper, diced
    • 1 green onion, sliced
    • 1 (8 ounce.) can water chestnuts, liquid removed & sliced
    • 2 tomatoes, cut up
    • Rice or possibly Chinese noodles

    Directions

    1. Brown meat in shortening. Season with salt. Add in water. Cover, simmer 40 min. Drain off fat, check while simmering. Combine sugar and cornstarch. Add in vinegar and pineapple liquid, soy sauce and blend well. Add in to meat, reduce heat and simmer about 5 min. Add in green pepper, onion, pineapple, chestnuts and tomatoes. Cook 3 min. Serve with rice or possibly noodles. Serves 6.
