  • Pineapple Chocolate Chip Cookies

    Ingredients

    • 1 cup shortening
    • 1 cup sugar
    • 1 cup packed brown sugar
    • 2 eggs
    • 2 cans (8 oz each) crushed pineapple, drained
    • 2 tsp vanilla
    • 4 cups flour
    • 2 tsp baking soda
    • 2 tsp baking powder
    • 1/2 tsp salt
    • 1 cup (6 oz.) semi-sweet chocolate chips
    • 1 cup chopped walnuts, optional

    Directions

    1. In a mixing bowl, cream the shortening and both of the sugars until light and fluffy.
    2. Add the eggs, one at a time
    3. Beat well after each addition
    4. Beat in the pineapple and the vanilla
    5. Combine the flour, baking soda, baking powder, and salt
    6. Gradually add to the creamed mixture
    7. Stir in the chocoalte chips and the walnuts, if desired
    8. Drop by rounded tablespoonfuls 2 inches apart onto the greased baking sheets
    9. Press down lightly
    10. Bake at 375 F for 10-12 minutes or until lightly browned
    11. Remove to wire racks to cool
