Penne With Shrimp And Tomato Vodka Sauce
Ingredients
- 1 Tbsp. butter
- 28 ounce canned Italian plum tomatoes
- 1/4 c. fresh basil minced
- 1/2 c. vodka
- 6 Tbsp. whipping cream
- 1 lb medium shrimp peeled and deveined
- 1 lb penne
- fresh basil sprigs
Directions
- Heat butter in heavy large skillet over medium heat. Add in tomatoes with juices and bring to a boil, crushing tomatoes with back of spoon. Reduce heat, add in minced basil and simmer 15 min. Season to taste with salt and pepper. Add in vodka and cream and boil 3 min. Add in shrimp and simmer till cooked through, turning occasionally, about 3 min.
- Meanwhile, cook pasta in large pot of boiling salted water till al dente.
- Drain well.
- Add in pasta to sauce in skillet and stir to heat through. Divide pasta among plates. Garnish with basil and serve.
