Penne With Shrimp And Tomato Vodka Sauce

Ingredients

  • 1 Tbsp. butter
  • 28 ounce canned Italian plum tomatoes
  • 1/4 c. fresh basil minced
  • 1/2 c. vodka
  • 6 Tbsp. whipping cream
  • 1 lb medium shrimp peeled and deveined
  • 1 lb penne
  •     fresh basil sprigs

Directions

  1. Heat butter in heavy large skillet over medium heat. Add in tomatoes with juices and bring to a boil, crushing tomatoes with back of spoon. Reduce heat, add in minced basil and simmer 15 min. Season to taste with salt and pepper. Add in vodka and cream and boil 3 min. Add in shrimp and simmer till cooked through, turning occasionally, about 3 min.
  2. Meanwhile, cook pasta in large pot of boiling salted water till al dente.
  3. Drain well.
  4. Add in pasta to sauce in skillet and stir to heat through. Divide pasta among plates. Garnish with basil and serve.
