Turkey rolls with pesto and tomato sauce

- 400g turkey meat (3 - 4 steaks)
- 2 tbs red pesto sauce
- 3 tbs corn flour
- ½ tsp pepper
- ¼ tsp salt
- 3 tbs olive oil (divided)
- 1 tbs butter
- 400 g plum tomatoes, seasoned with onion and garlic, canned
- ¼ tsp salt
- Fresh basil leaves, chopped
Directions
- With a meat mallet gently flatten the steaks.
- Smear ½ tablespoons of red pesto on each steak. Roll steaks into rolls, secure each roll with wooden or metal toothpicks.
- Roll the meat in a corn flour, pepper and salt mixture.
- Sauté rolls over moderate heat in a mixture of 2 tablespoons of olive oil and butter for about 3 minutes on each side until golden. Set aside to cool just a little.
- Break plum tomatoes with a wooden spoon into smaller chunks, simmer for 2 minutes in the remaining olive oil (1 tablespoon), add salt, and sprinkle with fresh basil.
- Take toothpicks out of the meat, and cut each roll into slices of desired thickness.
- Serve with cooked pasta and tomato sauce.
