Pear Quesadillas With Tomatillo Salsa
Ingredients
- 8 x tomatillos minced
- 3 Tbsp. rice vinegar
- 3 Tbsp. extra virgin olive oil
- salt to taste
- 4 x flour tortillas 10-inch
- 1/2 lb dill Havarti cheese grated
- 4 x pears sliced thin
- 2 Tbsp. butter plus
- 2 tsp butter for sauteing
Directions
- For the Tomatillo Salsa: Combine tomatillos, vinegar, oil and salt in small bowl.
- For the Quesadillas: Lay tortilla on work surface. Spread 1/4 cheese across 1/2 of tortilla, then top cheese with 1 sliced pear. Fold over tortilla. Repeat with remaining tortillas, cheese and pears.
- Heat 2 tsp. butter in skillet over medium heat. Saute/fry tortilla on both sides till cheese is melted and tortilla is crisp, 2 to 3 min per side. Repeat with remaining tortillas, melting 2 tsp. butter to saute/fry each.
- Cut each quesadilla into 4 wedges. Spoon Tomatillo Salsa over top and serve immediately.
- This recipe yields 4 servings.
