No Bake Chewy Granola Bars

- 1/4 cup butter
- 1/4 cup honey
- 1/3 cup brown sugar
- 2 cups quick cooking oats (not rolled oats)
- 1 cup crispy rice cereal
- 1/2 tsp vanilla
- 2 Tbls mini chocolate chips
Directions
- Stir oats and rice cereal together. Set aside. Over medium heat, melt butter, honey and brown sugar together. Once it starts to bubble, reduce heat, and cook for 2 minutes. Stir in vanilla. Pour syrup over the oat mixture. Stir until well coated. Pat into a greased sheet pan. Mine were about 1/2 in thick. Thoroughly press them together, or they will crumble when you cut into them. Sprinkle chocolate chips evenly across the bars. Lightly press in the chips. Allow to cool for at least 2 hours. Cut into bars, store in air tight container at room temperature.
