I couldn’t forget what the former Minister told me when he tasted the fried chicken we served. He said, “I travelled to different countries with the President but I never tried this kind of chicken everywhere. Homemade food is the best.”
I firmly believe the simpler, the better. In my recipe, I don’t have the exact measurements of the ingredients. Just cover it with everything. No exact time of marination. If you want to cook immediately, marinate chicken for 15 minutes. I prefer skinless chicken. Pierce the chicken with a knife or fork after marinating so the marinade will be absorbed. No deep frying, I shallow fry the chicken in medium heat and cover the pan. INGREDIENTS:
cooking oil for shallow frying
chicken pieces, skinless
salt
black pepper
chicken bouillon powder vinegar
soy sauce
crushed garlic
flour
egg
DIRECTIONS:
1. Cover the chicken with all the ingredients.
2. Marinate for 15 minutes or several hours.
3. Shallow fry in covered pan.
4. Drain oil on paper towels.
5. Serve hot with your favorite sauces.
