Mexican Sliders
Fast, tasty and pretty healthy. Pared with a salad and fruit these make an excellent dinner. Ingredients
- 1/2 pound lean ground beef
- 1 small onion, chopped
- 1 carrot, grated
- 1 can pinto beans, 15 oz. drained
- 1 to 3 T salsa, mild to hot, as you prefer
- 1/4 t salt
- 3 T fresh cilantro, finely chopped
- 3 oz. sharp cheddar cheese, grated
- 12 small soft dinner rolls
Directions
- In a medium fry pan, sauté beef, grated carrot and onion over medium heat, breaking up meat with a wooden spoon. Add drained pinto beans, salt and salsa.
- Sauté until beef is cooked through and salsa is reduced.
- Remove from heat and stir in cilantro.
- Place rolls on a sheet of tin foil large enough to completely enclose them in a tightly sealed package. Slice off the tops of the rolls.
- Remove the dough from the center of each roll and reserve for use later. These can be dried and saved for breadcrumbs.
- Stuff each roll with meat mixture. Top with grated cheese. Replace roll tops and seal up foil package. Bake at 350 degrees for 10 to 15 minutes.
