    Fast, tasty and pretty healthy. Pared with a salad and fruit these make an excellent dinner.

    Ingredients

    • 1/2 pound lean ground beef
    • 1 small onion, chopped
    • 1 carrot, grated
    • 1 can pinto beans, 15 oz. drained
    • 1 to 3 T salsa, mild to hot, as you prefer
    • 1/4 t salt
    • 3 T fresh cilantro, finely chopped
    • 3 oz. sharp cheddar cheese, grated
    • 12 small soft dinner rolls

    Directions

    1. In a medium fry pan, sauté beef, grated carrot and onion over medium heat, breaking up meat with a wooden spoon. Add drained pinto beans, salt and salsa.
    2. Sauté until beef is cooked through and salsa is reduced.
    3. Remove from heat and stir in cilantro.
    4. Place rolls on a sheet of tin foil large enough to completely enclose them in a tightly sealed package. Slice off the tops of the rolls.
    5. Remove the dough from the center of each roll and reserve for use later. These can be dried and saved for breadcrumbs.
    6. Stuff each roll with meat mixture. Top with grated cheese. Replace roll tops and seal up foil package. Bake at 350 degrees for 10 to 15 minutes.
