Mango Pudding/Ice Cream
This lovely dessert can be served as is...like a creamy pudding, or frozen and scooped out like ice cream. Ingredients
- Mango Pudding
- 1 cup macadamia nuts
- 3 mangoes, pitted and sliced
- 1/2 avocado
- 1/2 banana
- 1 tsp lemon juice
- 2 Tbsp Tropical Traditions Coconut Cream (or 1 Tbsp coconut oil and 1 Tbsp shredded coconut)
- pinch of salt
Directions
- Process macadamia nuts. Add mangoes and mix. Add remaining ingredients and mix until very creamy.
- Chill and serve. Top with fresh mango and/or chopped macadamia nuts.
- This can also be frozen and turn through a juicer with the blank screen to make a delicious ice cream. If you don't have a juicer just let soften a bit when you take it out o the freezer. Scoop out and top with drizzled chocolate sauce and shredded coconut! YUM
