  • Mango Pudding

    Ingredients

    • 2 env Gelatin, Unflavored
    • 1 1/4 c. Water
    • 1 c. Sugar
    • 1 1/2 c. Mangos, Sliced, (1 Lg)
    • 1 1/2 c. Lowfat milk
    • 1 1/4 c. Vanilla Ice Cream
    • 1/4 tsp Vanilla
    • 1 x Mango, Sliced, For Garnish

    Directions

    1. Soften gelatin in 1/2 c. cool water. Bring remaining 3/4 c. water to boil in small saucepan. Add in gelatin, then sugar and stir till dissolved. Set aside to cold. Turn cooled mix into blender container. Add in mango and puree. Add in lowfat milk, ice cream and vanilla. Blend 2 min, stopping and starting at 30-second intervals. Turn into 2-qt bowl. Cover and refrigerate4 hrs or possibly longer. To serve, spoon pudding into dessert bowls or possibly glasses.
    2. Garnish with mango slices.
    3. Note: If using canned mango, reduce sugar to 3/4 c. Drain well so as not to increase liquid content.
