Mango Pudding/Ice Cream

This lovely dessert can be served as is...like a creamy pudding, or frozen and scooped out like ice cream.

Ingredients

  • Mango Pudding
  • 1 cup macadamia nuts
  • 3 mangoes, pitted and sliced
  • 1/2 avocado
  • 1/2 banana
  • 1 tsp lemon juice
  • 2 Tbsp Tropical Traditions Coconut Cream (or 1 Tbsp coconut oil and 1 Tbsp shredded coconut)
  • pinch of salt

Directions

  1. Process macadamia nuts. Add mangoes and mix. Add remaining ingredients and mix until very creamy.
  2. Chill and serve. Top with fresh mango and/or chopped macadamia nuts.
  3. This can also be frozen and turn through a juicer with the blank screen to make a delicious ice cream. If you don't have a juicer just let soften a bit when you take it out o the freezer. Scoop out and top with drizzled chocolate sauce and shredded coconut! YUM
