Mango Pickle
tangy and spicy taste and perfumed with curry leaves. Ingredients
- 1 semi/unripe mango - remove seed and cubed.
- 2 tbsp gingerly oil
- 1/2 tbsp plain chili powder
- 1 tsp black mustard seeds
- 1/4 tsp fenugreek seeds
- 1/2 tsp turmeric/kunyit
- A pinch of asafetida powder
- 1/2 cup vinegar (more of less depending on taste)
- 1/2 tbsp sugar (quantity depends on the sweetest of mango)
- 3-4 sprigs curry leaves
- Salt for taste
Directions
- In the heated oil, splatter mustard seeds.
- Add chili and turmeric powder.
- Quickly stir and goes in all the other ingredients.
- Stir and cook mango to a texture or crunch you prefer.
- Remove and once cool down, pack in bottle and store in fridge.
