    Ingredients

    • 1 chicken cutlet
    • 2 medium onions
    • 2 carrots, sliced1 celery stalk
    • handful of parsley, chopped
    • 1 tablespoon olive oil
    • 1 teaspoon basil
    • 1 teaspoon honey lemon pepper
    • a dash of black pepper
    • 1 teaspoon coriander leaves
    • 3 cups of water - added more later

    Directions

    I have not been happy with my crockpot.. As I had it, spots started appearing in the ceramic. These are not dirt spots but ingrained into the material, itself and the pot always looks soiled. Although, I know, it has been scrubbed and it is spotless, it just doesn't feel right to use it. I look at it and it bothers me to the point that I would have thrown it out, if I wasn't thrifty.

    I decided to look on Amazon and see if I could get a small one at a very reasonable price. Sure enough, I found a minuscule one, 2 and 1/2 quarts for seventeen dollars. I am sure, it is not the best quality, but if it works, that is good enough for me. Oops, no, it also has to stay clean looking.

    I have used it a few times and I like the way it works, better than my other one. It heats up more quickly on high but stays just right on low. Maybe, because it is smaller, it heats faster. I like the way it cooks the food and I am glad I invested in it.

    Last night and today, I made these mini soups, enough for the two of us with some remaining.

    Last night's soup doesn't really have a name. It is like a chicken soup but I cooked quickly and with minimum embelishments. I put, in the pot, one chicken cutlet and that was going to carry it, flavor-wise except for the odd combination of seasonings, I added.

    In a separate pot, I seared the chicken. (I found I could have done that in the crockpot. Tonight, I browned chopped meat in the crockpot. My old one would not have done that.)

    In the microwave, I cooked the vegetables for three minutes on high.

    Place all the vegetables and the chicken into the water in the crockpot. Cook on high for one hour.

    Lower temperature to medium or low, depending on your crockpot.

    Cook from 6 to 8 hours.

    When, you remove the chicken, cut it into strips and replace it, in the soup.

    With the vegetables and chicken, it is a meal, in itself.

    With this kind of soup, you can be versatile and add any vegetables, you want. Make it your way.
