Light Spinach Alfredo

- 3 carrots – sliced
- 3 stalks of celery – sliced
- ½ onion – sliced
- 4 cloves garlic – chopped
- 9 oz. box of frozen creamed spinach
- 1 cup of chicken broth
- 1 cup of milk
- 1 tablespoon of butter
- Drizzle of olive oil
- ¼ cup parmesan cheese
- Dash of salt
- Dash of black pepper
- Dash of nutmeg
- Dash of red pepper flakes
- 1 lb. of your favorite noodles
Directions
- Heat a large frying pan with a tablespoon of butter and a drizzle of olive oil. Add the carrots, celery, onions and garlic. Sauté until the onions are soft. Add the frozen spinach with the heat on low to soften.
- When the spinach is incorporated; add the chicken broth and simmer on low.
- Add the milk, parmesan cheese and the seasonings continue to simmer on low for a few minutes then set aside while preparing the noodles.
- Add the noodles to the spinach sauce. Garnish with grated cheese.
