  • Easy Light Spinach Lasagna

    Ingredients

    • 1 pound lowfat sm. curd cottage cheese
    • 1 1/2 c. shredded Mozzarella cheese, divided
    • 1 egg
    • 1 (10 ounce.) pkg. frzn minced spinach, thawed and liquid removed
    • 1 teaspoon salt
    • 3/4 teaspoon oregano
    • 1/8 teaspoon pepper
    • 2 (15 1/2 ounce.) jars spaghetti sauce (or possibly use your sauce recipe)
    • 1/2 pkg. (8 ounce.) lasagna noodles
    • 1 c. water

    Directions

    1. NOTE: Recipe eliminates one step. No need to cook noodles ahead.
    2. In large bowl, mix cottage cheese, 1 c. Mozzarella, egg, spinach, salt, oregano and pepper.
    3. In greased 9x13x2 inch baking dish, layer 1/2 c. sauce, 1/3 of noodles and half the cheese mix. Repeat. Top with remaining noodles, then remaining sauce. Sprinkle with remaining 1/2 c. Mozzarella. Pour 1 c. water around edges. Cover tightly with foil. Bake in 350 degree oven 1 hour and 15 min or possibly till bubbly. Let stand 15 min before serving.
    4. Mixed green salad and garlic bread are good go-withs. Makes 8 servings.
