    This is an easy chicken dish with strong flavors of lemon and rosemary.

    Ingredients

    • 1.5 lbs boneless skinless chicken thighs
    • 2 tbs poultry seasoning
    • 1 medium onion
    • 3 cloves garlic
    • 1/2 cup lemon juice
    • 4 stalks fresh rosemary
    • 2 tbs extra virgin olive oil
    • 1/2 tsp salt
    • pepper to taste

    Directions

    1. Cut the chicken into bite-sized chunks
    2. Season the chicken with the poultry seasoning
    3. Soak the chicken in the lemon juice for about 15 minutes
    4. Mash and chop the garlic (medium dice)
    5. Chop the onion (medium dice)
    6. Heat a large saute pan over medium heat
    7. Add the oil to the pan
    8. Add the onion, garlic, and salt to the pan, and sweat the onion until translucent, about 5 minutes
    9. Add the chicken and the lemon juice, and increase the heat to medium-high until the lemon juice boils, then reduce to a simmer (medium low) and add half the rosemary
    10. Simmer for about 15 minutes, until the chicken is mostly cooked through.
    11. Add the remaining rosemary and cook for another 5 minutes
    12. Serve over rice or pasta

      Cooked this tonight and it was really tasty. Thanks for sharing, Ben. I would recommend adding just a little cayenne pepper to spice it up. Not for the kids, though.

          I cooked this going by the recipe, but I used chicken breasts instead of thighs. They were a little dry. Next time I will use thighs and maybe add a little more spice.

              This was pretty good. Although, I made a lot of changes. My husband had the chicken with the poultry seasoning and the rosemary, but no lemon. I had the chicken with the lemon, but no rosemary or poultry seasoning. Mine was great, and my husband said his was great.

                Chicken is one of our favorites. My kid enjoy it a lot but is very picky on the taste. I will have to try and do this for variety.

                  I also tried this dish and found it to be delicious. For a healthier touch, i substituted boneless skinless chicken breast instead of thighs, and I added a touch of basil and italian seasoning to give it that delicious italian zing. I also recommend adding finely diced italian sausage to liven the flavor.

                    Cooked this tonight and it was great...I substituted a little bit of garlic powder for the poultry seasoning and also used lemon pepper instead of plain pepper at the end...served over spinach-stuffed tortellini...everyone seemed to enjoy. Total time about 25 min. I would recommend as a good, easy option for both during the week and also for dinner parties. Thanks Ben. P.S. I bought a rosemary plant and was wondering if anyone had suggestions for keeping it alive and growing in the pot, as cultivating plants has never been my forte before...
