lemon rosemary chicken

This is an easy chicken dish with strong flavors of lemon and rosemary.

Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 2 tbs poultry seasoning
  • 1 medium onion
  • 3 cloves garlic
  • 1/2 cup lemon juice
  • 4 stalks fresh rosemary
  • 2 tbs extra virgin olive oil
  • 1/2 tsp salt
  • pepper to taste

Directions

  1. Cut the chicken into bite-sized chunks
  2. Season the chicken with the poultry seasoning
  3. Soak the chicken in the lemon juice for about 15 minutes
  4. Mash and chop the garlic (medium dice)
  5. Chop the onion (medium dice)
  6. Heat a large saute pan over medium heat
  7. Add the oil to the pan
  8. Add the onion, garlic, and salt to the pan, and sweat the onion until translucent, about 5 minutes
  9. Add the chicken and the lemon juice, and increase the heat to medium-high until the lemon juice boils, then reduce to a simmer (medium low) and add half the rosemary
  10. Simmer for about 15 minutes, until the chicken is mostly cooked through.
  11. Add the remaining rosemary and cook for another 5 minutes
  12. Serve over rice or pasta
