Lemon Cake
The scent and fragrant of lemon in a soft moist crumbly cake. Ingredients
- 180g soft butter
- 150g caster sugar (add more if you like)
- 3 eggs - room temperature
- 300g all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp lemon zest
- 200g buttermilk (otherwise mix 1 tsp vinegar/lemon juice with the same amount of milk)
Directions
- Sift flour with baking powder and baking soda.
- Keep aside.
- Cream butter and sugar till soft and fluffy.
- Add eggs one at a time and continue creaming to incorporate.
- Mix in lemon juice.
- Fold buttermilk and flour alternatively.
- Tip into a greased baking pan.
- Bake at 170C for about 50 minutes or until cake is cooked.
