    The scent and fragrant of lemon in a soft moist crumbly cake.


    • 180g soft butter
    • 150g caster sugar (add more if you like)
    • 3 eggs - room temperature
    • 300g all purpose flour
    • 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 1 tsp lemon zest
    • 200g buttermilk (otherwise mix 1 tsp vinegar/lemon juice with the same amount of milk)


    1. Sift flour with baking powder and baking soda.
    2. Keep aside.
    3. Cream butter and sugar till soft and fluffy.
    4. Add eggs one at a time and continue creaming to incorporate.
    5. Mix in lemon juice.
    6. Fold buttermilk and flour alternatively.
    7. Tip into a greased baking pan.
    8. Bake at 170C for about 50 minutes or until cake is cooked.
