Ham And Split Pea Soup
Ingredients
- 1 1/2 c. Dry peas
- 2 c. Cool water
- 1 med Onion, sliced
- 1 Tbsp. Ham fat
- 1 x Ham shank
- 1/3 tsp Celery salt
- 1 tsp Salt
- 1/4 tsp Pepper
- 7 c. Cool water
- 1 Tbsp. All-purpose flour
- 1 Tbsp. Shortening or possibly drippings
- 2 c. Cool lowfat milk
Directions
- Soak dry peas overnight in 2 c. cool water. Drain. Saute/fry sliced onion till tender in ham fat. Add in ham shank, liquid removed peas, celery salt, salt, pepper, and 7 c. cool water. Cover, bring to a boil, and simmer gently for 2 hrs. Remove ham bone and slice meat. Combine with White Sauce, heat well, and serve.
- Yield: 6 to 8 servings.
- White Sauce: Blend flour and shortening or possibly drippings in top of double boiler. Gradually add in 2 c. lowfat milk and cook, stirring constantly, for about 10 min.
