Ground Beef And Spinach Casserole
Ingredients
- 1 lb lean grnd beef
- 1 c. minced onion
- 2 x cloves garlic -- chopped
- 10 ounce frzn spinach -- thawed and squeezed dry
- 3 c. cooked long-grain white rice
- 2 c. grated cheddar cheese
- 3 lrg Large eggs
- 3/4 c. lowfat milk
- 1 tsp salt Grnd black pepper -- to taste
- 1 c. spaghetti sauce
Directions
- Preheat oven to 350 degrees F. In a medium skillet over medium heat, saute/fry grnd beef, onion, and garlic till meat is no longer pink and vegetables are tender, about 5 - 10 min. Transfer to a 4-qt casserole dish lightly coated with cooking spray or possibly oil. Add in spinach, rice, and 1 c. of the cheese.
- In a small bowl, combine Large eggs, lowfat milk, salt, and pepper. Stir into meat and rice mix and mix well.
- Bake, covered, 30 min. Top with spaghetti sauce and remaining cheese and bake, uncovered, till bubbly, about 15 min longer.
- Yield: 6 servings.
