  • Beef and Veggies Casserole Pinoy Style (Mechado)

    Stews and casseroles are a few of my favorite dishes that i enjoy cooking and serving to my family and friends.

    Ingredients

    • 1 kilo Beef with fat, cut into chunk
    • 1 cup tomato sauce or 1/2 cup tomato paste
    • 1 onion, chopped
    • 5 cloves garlic, minced
    • 2pcs bay leaves
    • 4 med potatoes, quartered
    • 1 med carrot, cut into cubes
    • 1/2 cup green peas
    • 2 tbsp cane vinegar
    • 1 red bell pepper, sliced
    • 1 green bell pepper, sliced
    • 2 cups beef stock (or beef cubes dissolved in water)
    • 1/4 cup soy sauce
    • salt and pepper to taste
    • Canola oil
    • Cornstarch (optional)

    Directions

    1. In a pot, heat oil and saute garlic and onions.
    2. Add beef and stir fry until well blended.
    3. Add soy sauce, bay leaves and beef stock then simmer under medium heat until tender. Add water if necessary. (for quicker process use a pressure cooker to tender the meat, i prefer slow cooking)
    4. Add vinegar and boil again for 2-3 minutes. Do not stir.
    5. Add carrots, potatoes, green peas and bell pepper. Simmer until all are soft and tender.
    6. Adjust seasoning with salt and pepper according to taste.
    7. Keep simmering until juices are almost out.
    8. Transfer to a serving dish.
    9. *If you want some juice/sauce, add cornstarch to the mixture to thicken the sauce. then remove from heat.
