Ground Beef And Spinach Casserole

Ingredients

  • 1 lb lean grnd beef
  • 1 c. minced onion
  • 2 x cloves garlic -- chopped
  • 10 ounce frzn spinach -- thawed and squeezed dry
  • 3 c. cooked long-grain white rice
  • 2 c. grated cheddar cheese
  • 3 lrg Large eggs
  • 3/4 c. lowfat milk
  • 1 tsp salt Grnd black pepper -- to taste
  • 1 c. spaghetti sauce

Directions

  1. Preheat oven to 350 degrees F. In a medium skillet over medium heat, saute/fry grnd beef, onion, and garlic till meat is no longer pink and vegetables are tender, about 5 - 10 min. Transfer to a 4-qt casserole dish lightly coated with cooking spray or possibly oil. Add in spinach, rice, and 1 c. of the cheese.
  2. In a small bowl, combine Large eggs, lowfat milk, salt, and pepper. Stir into meat and rice mix and mix well.
  3. Bake, covered, 30 min. Top with spaghetti sauce and remaining cheese and bake, uncovered, till bubbly, about 15 min longer.
  4. Yield: 6 servings.
