Green Salad With Red Pepper Relish Dressing
Ingredients
- 2 x romaine hearts minced
- 1 bag mixed baby greens - (5 ounce)
- 6 x red radishes sliced
- 1 c. minced fresh snap peas
- 6 x scallions sliced on an angle
- 3 Tbsp. red wine vinegar
- 1 x rounded tsp. sugar
- 1/2 c. red pepper relish (found on condiment aisle)
- 1/2 c. extra-virgin extra virgin olive oil Coarse salt to taste Freshly-grnd black pepper to taste
Directions
- Combine minced romaine, baby greens, radishes, snap peas, and scallions in a large salad bowl.
- Combine vinegar, sugar and relish in a small bowl. Whisk in oil in a slow stream.
- Toss salad with dressing. Season salad with salt and pepper, to your taste and serve.
- This recipe yields 8 to 10 servings.
