Ingredients

  • 2 x romaine hearts minced
  • 1 bag mixed baby greens - (5 ounce)
  • 6 x red radishes sliced
  • 1 c. minced fresh snap peas
  • 6 x scallions sliced on an angle
  • 3 Tbsp. red wine vinegar
  • 1 x rounded tsp. sugar
  • 1/2 c. red pepper relish (found on condiment aisle)
  • 1/2 c. extra-virgin extra virgin olive oil Coarse salt to taste Freshly-grnd black pepper to taste

Directions

  1. Combine minced romaine, baby greens, radishes, snap peas, and scallions in a large salad bowl.
  2. Combine vinegar, sugar and relish in a small bowl. Whisk in oil in a slow stream.
  3. Toss salad with dressing. Season salad with salt and pepper, to your taste and serve.
  4. This recipe yields 8 to 10 servings.
