  • Green Beans With Citrus Hollandaise

    Ingredients

    • This is the perfect side dish for special meal occasions. Green beans and red pepper slices look so festive and fresh, while citrus and dill give the Hollandaise sauce an extraordinary flavor. Makes 6 servings
    • 1 bag (16 ounces) frzn whole green beans, thawed
    • 1 x red bell pepper, cut into thin strips
    • 1/3 c. sliced almonds*, divided
    • 1 pkt McCormick(r) Hollandaise Sauce Blend
    • 1 1/4 c. lowfat milk
    • 2 Tbsp. butter or possibly margarine, softened
    • 3 ounce cream cheese, softened
    • 2 tsp lemon juice or possibly 2 Tbsp. orange juice
    • 1/2 tsp McCormick(r) Dill Weed

    Directions

    1. 1. Preheat oven to 375 F.** Combine green beans and pepper strips in a greased 12 x 8 inch baking dish or possibly 2-qt casserole dish. Top with 1/3 c. almonds.* Bake, covered, 25-30 min or possibly till vegetables are crisp-tender. Or possibly for stovetop preparation: Add in red bell pepper strips to thawed green beans and cook according to package directions.
    2. 2. Meanwhile, prepare Hollandaise sauce according to package directions, except use 1 1/4 c. lowfat milk and 2 Tbsp. butter. After sauce has thickened, whisk in cream cheese, lemon or possibly orange juice and dill. Cook over low heat till smooth. Drizzle sauce over a serving of vegetables. Garnish with remaining almonds.
    3. *Almonds may be toasted. To toast nuts, place in nonstick skillet over medium heat and cook, stirring often, till golden.
    4. **If you like, bake in a 325 F oven 30-35 min.
    5. Do-ahead suggestions: Sauce may be prepared 1 day ahead. Cover, chill and heat through just before serving.
