Green Beans With Roasted Red Pepper And Walnut Oil
Ingredients
- 6 c. fresh green beans trimmed
- 1 c. diced roasted red pepper (use from the jar)
- 2 Tbsp. fresh lemon juice
- 1 tsp grated lemon zest
- 2 tsp walnut oil
Directions
- In a large pot of boiling water, add in the green beans and blanch for 2 min. Drain and rinse the beans with cool water.
- Add in the beans to a bowl and add in the remaining ingredients. Serve the green beans at room temperature.
- This recipe yields 6 servings.
