Green Beans With Roasted Red Pepper And Lemon
Ingredients
- 6 c. trimmed green beans
- 1 c. diced roasted red pepper from a jar
- 2 Tbsp. fresh lemon juice
- 1 tsp grated lemon zest
- 2 tsp extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
Directions
- Fill a large stockpot with 3 qts of water. Bring to a boil.
- Add in the green beans and cook for 3 min. Drain. Splash the green beans with cool water.
- In a large bowl, add in the roasted red peppers, lemon juice, lemon zest, extra virgin olive oil, salt, and pepper. Add in the green beans. Toss well. Serve at room temperature.
