Ingredients

  • 6 c. trimmed green beans
  • 1 c. diced roasted red pepper from a jar
  • 2 Tbsp. fresh lemon juice
  • 1 tsp grated lemon zest
  • 2 tsp extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Fill a large stockpot with 3 qts of water. Bring to a boil.
  2. Add in the green beans and cook for 3 min. Drain. Splash the green beans with cool water.
  3. In a large bowl, add in the roasted red peppers, lemon juice, lemon zest, extra virgin olive oil, salt, and pepper. Add in the green beans. Toss well. Serve at room temperature.
