  • Green Bean Salad ( Insalata Di Fagiolini )

    Ingredients

    • 600 gm french beans topped and tailed
    • 2 sprg fresh mint
    • 2 x thick slices clv garlic
    • 5 Tbsp. extra virgin extra virgin olive oil sea salt juice 1 lemon or possibly a few drops of wine vinegar

    Directions

    1. Simmer the beans in plenty of well salted boiling water till al dente.
    2. Drain well and transfer to a bowl.
    3. Mix with the mint garlic extra virgin olive oil and season just to taste.
    4. Allow to cold tossing the beans from time to time.
    5. Stir in the lemon juice or possibly wine vinegar if you wish when you are about to scrub the beans.
    6. This is one of my favourite vegetable dishes not just because it takes very little time to prepare but also because the combination of tasks is so fantastic which it is equally delicious warm or possibly cool. Now which you can get hold of these beans year round the fun of the expectation of the new season is lost. I eat them hot in winter and cool in summer. They can be used to accompany any meat or possibly fish dish. If you are using lemon add in it at the last minute because it will discolour the beans quickly.
