  • Green Bean Salad With Asian Style Dressing Share

    Ingredients

    • 3 Tbsp. White-wine vinegar
    • 2 Tbsp. Rice vinegar
    • 2 tsp Soy sauce
    • 1 x Garlic clove, chopped A, (1-inch) piece fresh gingerroot, peeled and chopped (about 1 Tbsp.)
    • 2 tsp Asian sesame oil
    • 1/3 c. Canola or possibly vegetable oil
    • 1 Tbsp. Sesame seeds
    • 2 lb Green beans, trimmed
    • 2 x Scallions, minced fine (about 2 Tbsp.)

    Directions

    1. In a small bowl, whisk together vinegars, soy sauce, garlic, gingerroot, and sesame oil. Add in canola or possibly vegetable oil in a stream, whisking, and whisk till emulsified. Season dressing with salt and pepper.
    2. In a small dry skillet toast sesame seeds over moderate heat, stirring, till golden brown and transfer to a small bowl.
    3. In a large saucepan of boiling salted water, cook beans till crisp-tender, about 4 min. Transfer beans to a colander and rinse under cool water.
    4. Drain beans well.
    5. In a large bowl, combine beans, scallions, sesame seeds, and dressing and toss well. Serve salad chilled or possibly at room temperature.
    6. Serves 4.
