    • 1/2 c. shortening
    • 3 c. sugar
    • 1 c. lowfat milk
    • 5 large eggs
    • 3 c. cake flour
    • 1 teaspoon salt
    • 1 teaspoon baking pwdr
    • 1 teaspoon vanilla
    • 1 teaspoon lemon extract
    • 1/4 teaspoon almond extract
    • 1 c. black walnuts
    • 1 stick butter
    • 2 sq. unsweetened chocolate
    • 1 beaten egg
    • Healthy pinch of salt
    • 1 box 10x powdered sugar
    • 1 teaspoon vanilla
    • 1 teaspoon lemon juice
    • Evaporated lowfat milk
    • 1 c. crushed nuts

    Directions

    1. Heat chocolate in butter. Add in soft shortening; cream. Add in sugar and cream well. Add in large eggs, 1 at a time. Beat between additions. Mix flavoring, add in to mix. Sift flour, measure, add in salt and baking pwdr and sift again. Add in flour and lowfat milk alternately. Beat 2 min with mixer or possibly 300 strokes by hand. Add in crushed walnuts (if black walnuts are not available, use 1 tsp black walnut flavoring). Pour into well greased 10 inch tube cake pan. Bake at 350 degrees for 1 hour.
    2. Heat butter with chocolate. Add in egg, salt, sugar, vanilla and lemon juice. Add in sufficient evaporated lowfat milk to make the consistency to spread. Add in nuts. (Don't add in any more black walnut flavoring.)
