  • Double Chocolate Pound Cake

    Ingredients

    • 1 German chocolate cake mix (I like Betty Crocker's)
    • 2/3 c. water
    • 3 large eggs
    • 1 c. lowfat sour cream
    • 1/2 pkg. miniature semi-sweet chocolate chips (1 c.)
    • 1 c. confectioners sugar
    • Water

    Directions

    1. Beat cake mix, water, large eggs, and lowfat sour cream till moistened. Beat, scraping bowl constantly, for 2 min. Mix in chocolate chips (don't use mixer; use spoon). Pour into greased and lightly floured 12 cup bundt cake pan or possibly 10 x 4 inch tube pan. Bake at 350 degrees for 40-45 min, till tester comes out clean. Cool 10 min; invert and remove pan. Cool and drizzle with Powdered Sugar Glaze. Sprinkle with coconut or possibly miniature chips.
    2. Mix sugar and 1 tbsp water. Stir in additional water, 1 tespoon at a time, till if you like consistency.
