Crustless Zucchini Quiche
Ingredients
- 3 c. zucchini, pared and diced
- 1 sm. onion, minced
- 1 c. Bisquick
- 4 lg. Large eggs
- 1/2 c. oil
- 1/2 c. Parmesan cheese
- 1 teaspoon parsley flakes
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Directions
- Mix all ingredients together, making sure zucchini is well coated. Bake in a buttered 8 x 10 inch Pyrex dish at 350 degrees for 30 min or possibly till golden. Cut into small pcs and serve hot.
