Ingredients

  • 3 c. zucchini, pared and diced
  • 1 sm. onion, minced
  • 1 c. Bisquick
  • 4 lg. Large eggs
  • 1/2 c. oil
  • 1/2 c. Parmesan cheese
  • 1 teaspoon parsley flakes
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  1. Mix all ingredients together, making sure zucchini is well coated. Bake in a buttered 8 x 10 inch Pyrex dish at 350 degrees for 30 min or possibly till golden. Cut into small pcs and serve hot.
