Crustless Spinach Quiche
Ingredients
- 3 beaten Large eggs
- 1 c. flour
- 1 c. lowfat milk
- 1 teaspoon salt
- 1 teaspoon baking pwdr
- 1 box frzn minced spinach
- 1 pound shredded Cheddar cheese
- Parmesan cheese (optional)
Directions
- Combine Large eggs and lowfat milk. Add in flour, baking pwdr and salt gradually to egg and lowfat milk mix. Add in cheese and thawed spinach; mix well.
- Pour into well greased 13x9 inch pan. Sprinkle the top with Parmesan cheese. Bake 30-35 min at 350 degrees. Cold 1/2 hour, cut into squares. Serves as appetizer.
- May also be baked in two glass pie plates for same time for entree or possibly brunch.
