Crustless Spinach Quiche

Ingredients

  • 3 beaten Large eggs
  • 1 c. flour
  • 1 c. lowfat milk
  • 1 teaspoon salt
  • 1 teaspoon baking pwdr
  • 1 box frzn minced spinach
  • 1 pound shredded Cheddar cheese
  • Parmesan cheese (optional)

Directions

  1. Combine Large eggs and lowfat milk. Add in flour, baking pwdr and salt gradually to egg and lowfat milk mix. Add in cheese and thawed spinach; mix well.
  2. Pour into well greased 13x9 inch pan. Sprinkle the top with Parmesan cheese. Bake 30-35 min at 350 degrees. Cold 1/2 hour, cut into squares. Serves as appetizer.
  3. May also be baked in two glass pie plates for same time for entree or possibly brunch.
