  • Country Ham And Quick Buttermilk Biscuits

    Ingredients

    • 12 lb uncooked country ham - (to 14)
    • 2 quart cider vinegar
    • 1 Tbsp. whole cloves
    • 1/2 c. butter or possibly margarine
    • 2 c. self-rising flour
    • 3/4 c. buttermilk Butter or possibly margarine melted

    Directions

    1. Place ham in a large container. Add in water to cover, and soak 24 hrs. Drain. Scrub ham 3 to 4 times in cool water with a stiff brush, and rinse well.
    2. Place ham, fat-side up, in a large roasting pan. Pour vinegar over ham; sprinkle with cloves. Cover with lid or possibly aluminum foil.
    3. Bake at 325 degrees for 4 hrs or possibly till meat thermometer registers 140 degrees. Remove from oven, and cold slightly. Slice ham, and serve with warm biscuits.
    4. For Quick Buttermilk Biscuits: Cut 1/2 c. butter into flour with a pastry blender till crumbly; add in buttermilk, stirring just till dry ingredients are moistened.
    5. Turn dough out onto a lightly floured surface; knead 3 or possibly 4 times. Roll dough to 3/4-inch thickness; cut with a 2 1/2-inch round cutter, and place on a lightly greased baking sheet.
    6. Bake at 425 degrees for 13 to 15 min. Brush biscuits with melted butter. (Makes 1 dozen)
    7. This recipe yields 35 to 40 servings.
