  • Cold Peanut Noodles With Chicken

    Ingredients

    • 3 1/2 Tbsp. soy sauce
    • 2 Tbsp. seasoned rice vinegar
    • 2 Tbsp. sesame oil
    • 2 Tbsp. sesame seed paste
    • 1 Tbsp. creamy-style peanut butter
    • 1 Tbsp. sugar
    • 1 Tbsp. chopped ginger
    • 2 tsp chopped garlic
    • 2 tsp chili garlic sauce
    • 1/2 tsp grnd toasted Sichuan peppercorns
    • 1 lb fresh Chinese egg noodles
    • 1 1/2 c. shredded cooked chicken breast (abt 1/2 lb)
    • 1/2 x English cucumber cut thin strips (abt 2" long by 1/4" wide)
    • 1 c. bean sprouts
    • 1 med carrot peeled, and cut into thin strips
    • 3 x green onions trimmed, and cut into thin strips
    • 1/4 c. minced roasted peanuts

    Directions

    1. Stir the soy sauce, rice vinegar, sesame oil, sesame seed paste, peanut butter, sugar, ginger, garlic, chili-garlic sauce and Sichuan peppercorns together in a medium bowl till smooth.
    2. For the Dish: Cook the noodles in a large pot of boiling water according to the package directions. Drain well, rinse them with cool water, and drain again.
    3. Pile the noodles in the center of a serving platter. Arrange the chicken, cucumber, bean sprouts, carrot and green onions around the noodles. Pour the dressing over the noodles and sprinkle the peanuts over the top. Toss at the table till the noodles are coated with dressing and serve.
    4. This recipe yields 4 servings.
