Cold Melon Soup
Ingredients
- 1 c. Orange juice
- 3 Tbsp. Lime juice
- 1 1/2 Tbsp. Honey
- 1 1/2 c. Cantaloupe, peeled, seeded, and minced
- 1 1/2 c. Honeydew melon, peeled, seeded and minced
- 1 c. Champagne or possibly apple cider
Directions
- Puree orange juice, lime juice, honey, half the cantaloupe and half the honeydew in a food processor or possibly blender. Transfer to a large bowl. Finely chop remaining melon. Stir into puree. Stir in champagne. Keep cold till read to serve.
