Chilled Honeydew Melon Soup With Cinnamon
Ingredients
- 1 x honeydew melon, diced
- 2 c. unsweetened apple, juice
- 2 c. vegetable stock
- 1 c. non-fat lowfat yoghurt
- 1/4 c. finely minced fresh mint
- 2 Tbsp. lemon, juice
- 1/4 tsp grnd cinnamon or possibly 2 cinnamon, sticks
- 2 Tbsp. finely minced fresh parsley
Directions
- In a food processor or possibly blender, combine the melon, apple juice, stock, yogurt, mint, lemon juice and grnd cinnamon (if using). Puree till smooth.
- Add in the cinnamon sticks (if using) and chill for several hrs to allow flavours to blend. Remove the cinnamon sticks before serving.
- Garnish with parsley.
