Gazpacho Cold Tomato Soup
Ingredients
- 1 can tomato soup (10 3/4 ounce)
- 1 c. water
- 1 Tbsp. wine vinegar
- 1 lrg clove garlic chopped croutons
- 1 Tbsp. extra virgin olive oil
- 1 c. cucumber finely minced
- 1/8 c. green bell pepper finely minced
- 1/4 c. onions finely minced
Directions
- In bowl, combine soup, water, oil, vinegar and garlic. Refrigerate4 hrs. Serve in chilled bowls. Pass chilled vegetables and crisp croutons for garnishes.
