Chocolate Tapioca Pudding
Ingredients
- 1 c. Sugar
- 3 Tbsp. Tapioca
- 1/8 tsp Salt
- 3 2/3 c. Lowfat milk
- 1 x Egg
- 2 ounce Unsweetened Chocolate
- 2 x To 3 Tsp. (optional)
- 1 tsp Vanilla Instant Coffee --
Directions
- Combine sugar, tapioca and salt in saucepan; stir in lowfat milk and beaten egg.
- Let stand 5 min. Add in chocolate and instant coffee. Cook and stir over medium heat till mix comes to a full boil and chocolate is well blended, about 15 min. Remove from heat and stir in vanilla. Cold for 20 min, stir. Chill.
- Makes about 8 servings.
