Ingredients

  • 1 c. Sugar
  • 3 Tbsp. Tapioca
  • 1/8 tsp Salt
  • 3 2/3 c. Lowfat milk
  • 1 x Egg
  • 2 ounce Unsweetened Chocolate
  • 2 x To 3 Tsp. (optional)
  • 1 tsp Vanilla Instant Coffee --

Directions

  1. Combine sugar, tapioca and salt in saucepan; stir in lowfat milk and beaten egg.
  2. Let stand 5 min. Add in chocolate and instant coffee. Cook and stir over medium heat till mix comes to a full boil and chocolate is well blended, about 15 min. Remove from heat and stir in vanilla. Cold for 20 min, stir. Chill.
  3. Makes about 8 servings.
